Okay i hear that racers do this once a season minimum sorta thing.
What does the mechanic actually do to the engine in this 'freshen up'

depends to what level.
"normally" at least rings, head gasket, plugs, general inspection.
could also include bearings and even pistons themselves.
Just depends on hours, whos riding and budget
XLR8 Racing
Spectrum Motorcycles
Computerforce
Metzler, Maxima oils
well bike be a k4 gsx-r 600, done over 50,000kms its more of a road bike that does trackdays,
but i do have yoshi cam, yoshi head gasket, yoshi valve cotters, and possible yoshi valve retainers to go in, and heads getting a port and polish while its off also.
though if its open might as well freshen up the motor, but no idea what is really done in a freshen up, i guessing its more of a strip and check that everything looks okay, I have no real plan on selling this bike ever.

The only reason I only ride in the Iron man Class is I have no friends left to enter the two man events,
my own fault really.

OK OK OK, keep your knickers on big fella.
Some parts (particularly Yoshimura retainers and valves) have an expected service life under race conditions and will be replaced religiously. It just aint worth the risk of failure.
Other parts will be inspected and replaced if found to be required.
Might mean a new set of rings and the like and that's about it.
As to who can do it, wouldn't have anyone other than Mr Clee touch my GSXR. Whether that's right or wrong doesn't worry me.
