Sorry, I'm confused. You have a car suddenly appear on your side of the road and you "drop a gear and pin the throttle" to take evasive action? Were you overtaking a vehicle at the time? Would not swerving straight over to the shoulder of the road have been a better idea?

I was riding in my lane... and the car pulled straight out in front of me! I rarely overtake unless there is like a zillion metres of clear road in front (being on a 250 and all!) I did swerve over to the shoulder of the road!I guess I didn't make it plain enough? Mys bad!

Some advice? Yeah, forget the "dropped a gear and pinned the throttle" crap. Sorry, sounds too much like a "look at me" story.
I was taught, by veteran riders and motorcycle bible books alike to be in a gear where you can always accelerate.
In this situation, one would assume small acceleration = grip, grip = harder turn, harder turn = getting out of the way faster. Doesn't seem wrong if you're accelerating to miss somebody, not towards them.
