Well its not like I haven't done ANY inspecting but I do admit to ruling out the brake pads at first cos they are relatively newish... but I am starting to think that there could be some crud...as suggested.

are you using EBC pads ?
More likely the lack of reservoir, means that there is no replacement of fluid when pads/disc wear (even slightly)and cause pistons to move further out the cylinder, to the fluids limit.
If braided lines are not fitted, when brake pedal pressure is applied, all that happens is the brake lines expand slightly. Less pressure is needed to do this than is required to move brake piston(s) and thus work brake.
I would suggest you refit a reservoir to stop...better ...in future...![]()
