Sorry my answer didn't answer the question you didn't ask. Yes the Z1000 has good ground clearance. I don't think it's as good as the R1 but then only a Sportbike would be. As the Z1000 is naked sports it's got a more comfortable riding position which generally means the pegs are lower. In this case not by much.
you will be dragging pegs easy on the track as they are (relative to sports bikes) low. Also suspention will be running further through their stroke as they are (again relatively) softly sprung, reducing ground clearance at speed when the suspension loads up.
You will peg out on the track. On the road you will be sweet (may touch done occasionly tho).

I had my heart set on a beautiful 03 Z1000, sat on it and it fit like a glove, rode it down the street and hated it.
Handlebars wanted to pull out of your hands and go to full lock at any corner at normal round town riding.
It could have been that particular bike, could have been tyre pressure, could have been any number of things - but I was turned right off. Couldn't be bothered trying to find another to ride.
In the end I bought an R1
.... back in green and feeling great ....
