    Pumpkins are dirt cheap at the moment, so get a few to store in the garage for winter use (they'll last for months!).

    Chop pumpkin into its natural "wedges" then coat lightly with olive oil. Don't bother removing the outer skin (this peels off easier when roasted). Roast in oven for an hour until nice blackened bits start to appear. Yu can chuck a whole head of garlic in to roast at the same time if desired!

    In large pot add a good "glug" of olive oil and add a big chopped onion and a few cloves of garlic.

    When both of the above are cooked, chuck them in a food processor and waz them up, then return everything to the pot. Add a generous cup of chicken stock. Add chili flakes for a bit of heat if you want to.
    Gentle simmer for 1/2 hr then season and add a cup of cream just before serving.

    A nice loaf of bread to go with it!

    A whole pumpkin will feed 4 for 2 days!
