I chewed out the top of a screw on my rear brake resivior. It needs to come out so I can have rear brakes again.
Is this something that can easily be done?

nope
not on a reservoir anyway, id imagine you'd have to be extremely careful?
usual fix is a reverse thread drill bit.
The res can come off the bike if need be without to many problems. It think my whole rear brake system needs an over haul as to get it to work I have to pump the rear brake, the fluid level drops down in the res, and 1 minute later there is no pressure on the lever and the fluid level is way back up high again.

suggestion: drill the top off the screw, remove the cover, grab the nub with vice grips and remove it ?

bring it along we can get the screw out no big problem!
you will need to get a new screw as we might not have one here
