I wouldn't worry too much about wind noise - you should be wearing earplugs on the open road anyway. It's kinda subjective anyway - depends on the bike, riding position, your jacket collar, etc etc. So if someone says "Helmet X is very quiet", it may be for them , on their bike, but may not be for you, and vice-versa.
My AGV was a quiet helmet, and when I bought my Shoei XR1000, I thought, "Man! This is noisy!" However, it was just ambient noise, and the Shoei is much, much more quiet on the open road, as it's a more aerodynamic helmet.
Things like vents contribute to the wind noise - the more you have open, the more whistle you'll get. The Shoei seems to be more streamlined than my AGV XVent, and it also buffets around less (it's less subject to turbulence) as it has a spoiler on the back.
Go to the shop, try the Shark on, and operate the controls for the vents, visor, etc. with your gloves on. Be cheeky and ask them if you can test-ride it. They may let you, even if it's on the basis that you pay for it, go for a ride, then buy summat else from them if it's no good.
I've had only one shop offer a test-ride - and a trade-in! I think that was just the salesman, because he changed shops shortly after that. But you never know until you ask.
