Assuming you're talking custom choppers, there's a couple of places in Akld (sorry can't remember names at the mo but check out petrolhead as I'm pretty sure thay advertise in it).
There's one down the mount next to GPHonda on MacDonald st, again can't remember the name but can find out if you like.
And there's Shannon of Speak engineering here in TePuke. Him I can recommend as I've seen his work up close and it's outstanding.
(These are only the ones I'm aware of, I gaurantee there's more.

AMPS would have to be the big one. Not sure where the little ones are but there are a few. Slashwylde or OutlawTorn would know aswell as a few of the harley riders on this site from up there.

Get you a cookie cutter kit bike from the States, You make it yourself with the help of a DVD and 150 hours labour????, You pay them a fat percentage of the kit and they sit back and call themselves Custom bike builders...

The problem with NZ these days is it is influenced by BS from oversea's.
For the cost of one crappy single downtube split cradle imported frame (and i use that term loosely) you could build a basic frame jig,get the seamless tube mandrel bent,buy a welder and do a welding course.
There used be places like the Hog Farm,no doubt there are still folk out there building frames or cutting OEM frames (even easier)
Most of the bikes seen on programs like American Chopper are simply not suited to being ridden here... Sensible chops with realistic rake and stretch are not that uncommon.
I kind of like the idea of one of those old school bikes with a TL engine with a little added flywheel weight,that or a diesel low rider like the attached pic.
