The date that counts when it comes to points being added and rolling off is the date of offense, not the date of payment.
The relevant processing will be done by LTNZ once you pay the fine, or two months after the ticket was issued if you haven't paid (ie, at the point it's sent to Court for collection), but one way or the other, if you commit offenses within a two-year period that cause you to accrue 100 points, bye-bye licence. Conversely, you don't have to worry about waiting to pay the fine if the dates of the relevant offenses were more than two years apart but the points are still showing on your licence.
I know this for sure because in October last year, I escaped going over 100 points (in spite of the ginga cunt on SH16's best efforts) by 4 days grace. I had a detailed conversation with LTNZ on the subject at the time.
