It did fog up a little in the weekend though. THICK fog all the way down from Auckland to Taupo at 5.45am. I didn't open it at all and it kept well but after a wile the sides started to fog a little.
Around the edges outside the pinlock fogs up white, but its so big/wide that it doesn't hinder any vision.

You did very well. My pre-ride dishwash liquid limited fogging for quite a while, but after about an hour of that thick fog I had to crack open the visor. Shortly after that even a crack open wasn't enough, as I had my head turned sideways to be able to see anything.
When we stopped I dried and buffed inside and out. Fail - rode most of the rest of the ride with the visor open, which bought tears to the eyes.
My last pinlock stopped fitting for some reason, I need to get a new one.
I've seen a suggestion to aim your breath down (actually it was more like "you're not a motorcyclist if you don't do this" inference).
Yeah nah, didn't work for me lol. Made it heaps worse in fact, probably because of the good seal around the chin.

If you didn't have a 1000+cc bike I would say yes. They are an excellent tyre. However Michelin only recommend them for sub 1000cc bikes. The Michelin motorcycle tyre selector is here:

If the tyres are particularly cheap and you are very keen just be very careful with the throttle on them. They simply are not made to handle that power output of a 1000cc+ bike.
The PP3 (Pilot Power 3) would be a better choice for your bike.

Only PR4's and PP3's are recommend for your bike. Even has the recommended tyre pressures. I also note that Michelin recommends a different tyre profile from the factory fitting in both cases as well - so it will change the bikes handling (presumably for the better as far as Michelin in concerned).

The PP3's were a big improvement on the prior ones - particularly with wet weather handling. The PP3 have excellent wet weather handling. They are also particularly good at laying down a lot of power in a straight line (sounds like something you like doing ...).
People often get the PR3 (Pilot Road) and PP3 (Pilot Power) mixed up. So if you read comments or reviews make sure that people are referring to the correct tyre.

Just got the new tires fitted. Went with the PP3's with a 190/50 on the rear, as thats whats always been on there.
Tyre guy had a good laugh saying its one of the first busas hes done where there haven't been massive chicken strips.
